I kept feeding my starter for weeks because I was too intimidated to do anything beyond the feeding. I discovered Nicole on YouTube and watched all her videos. I purchased the course, "How to Make Great Sourdough: and it was so worth the money. I have gone through the course multiple times and am now confident with baking bread and have also journeyed into using different types of flour. I am looking forward to additional courses and if I could choose topics, they would be adding inclusions and how to convert regular recipes into sourdough recipes.

Read MoreI've been stumbling with trying to bake sourdough bread since August of last year. Watching many instructional videos one after another. This is by far the best laid out instructional course I've watched. Prior to actually paying for this course I baked sourdough using Nicole's YouTube online successfully. Since August I've stumbled trying other bakers shortcuts and different variations of recipes. Each time I followed and used Nicole's YouTube recipe my bread turned out great. Ok.. I'm still struggling with high hydration.. but I'm sure using her instruction. I will succeed. Bottom line... take her course and use her material. I look forward to any additional videos she's willing to offer. To bad she doesn't offer an in person course. Thank you Nicole. Oh.. add-ins video available?

Read MoreJust wanted to say how impressed I am with your “Great Sourdough Bread” course. I really appreciate your clear instructions and thoughtful explanations. I am not new to sourdough bread. I picked it up as a pandemic hobby almost 2 years ago. I’ve watched tutorials and read books, but my results have been inconsistent. Going through your course, there were several “aha” moments. For example: * Folding. Many other tutorials talk about folding for strength and extensibility, but I was always confused about how many times to fold. (When is my dough extensible enough?) The window pane test after every fold is a great way to know! I’m sure as I get more experienced I’ll develop a feel for it, but for now it’s a great way to know when to stop with the folds. * Bulk fermentation. I’ve read about the “50% increase in volume” before, but it wasn’t until I read your PDF guide that I realized that folding and bulk fermentation are independent. I.e., I don’t have to keep folding while I’m waiting for the increase in volume — I can just let it rest until it reaches the desired volume. That might seem obvious, but it wasn’t to me. I’ve baked with your recipe twice already with great results. The first time with 10% whole wheat and today bumping that up to 15%. What's more, the recipe is manageable. I've achieved the same results with your steps as more complicated ones with a long autolyse and lamination, etc. If I save time, I'm more inclined to bake more often! Thank you for this amazing course!

Read MoreThis entire course is a gorgeous visual recipe. The instructor, Nicole, takes us through step-by-step to provide the viewer not only with one great recipe (and several variations), but also what happens if something goes wrong and how to tell that you're doing it right. I've been experimenting with sourdough making for years, trying lots of different methods from various cookbooks, but this is the foolproof class I needed from the beginning -- before I started experimenting without understanding the science. I feel confident I know what I'm doing now!

I like that she thinks of every possibility, like if you don't have filtered water do this, or if you can't find grapes, do that. I love her style, and I've listened to many teachers. I trust her and think she is a great find to the anyone looking for solid support in their baking journey.

This course will empower you with the know-how to overcome any challenge that comes your way.
Every single step of the sourdough process is demonstrated clearly and concisely on camera — nothing is left for you to figure out on your own. I don’t assume anything (like if you have specialized equipment). Which means I often demonstrate TWO ways of doing things.
For example: I show you two ways to proof: one with a regular mixing bowl, the other using a banneton (proofing basket) because they require two distinct ways of preparing the dough. I also show you how to make both an oval and a round loaf (they require two different methods of shaping). And when it comes to the baking, I show you how to use a dutch oven or a pizza stone. OTHER COURSES DON'T GO INTO THIS KIND OF DEPTH.
Well, don’t take my word for it. Read my five-star reviews from both novice and experienced bakers alike.
For my part, I’ve put months into writing, professionally filming and editing this course. I’ve also created a detailed step-by-step e-book, which is included in the course price.
A quick word on the book: this is a 52-page downloadable and printable e-book that includes how to make a sourdough starter; recipes for single AND double loaf doughs; recommended timetables; a sample bread diary; baker’s glossary; equipment list, and more! You’ll even find tips for high altitude baking and using 100% whole wheat.
My goal was to make this the most useful and comprehensive course available anywhere online. I can honestly say that this is the course I wish I’d had when I first started making sourdough.
Nope. You don’t need fancy baking gear to make great bread. I specifically created this course for you to make sourdough with the tools you already have on hand. The equipment I recommend in the course centers on a few affordable essentials.
I also break down some additional options that can make your sourdough life EASIER — because the tools you do use should be the right ones. For my complete list of tried-and-tested baking gear that I use day-in, day-out, CLICK HERE.
None at all. I walk you through every step of the process, from making your own sourdough starter through to analyzing your finished bread. Even if you’ve never made a single loaf of ANY bread in your life, I will get you making great sourdough.
This course goes far deeper than the step-by-step mechanics of just following a recipe. You will come away with a thorough understanding of how sourdough works:
I’ll help you take your bread to the next level by unlocking the secrets of fermentation — how to wield temperature, hydration and other key aspects of sourdough to create the loaf of your dreams. I’ll share my foolproof tips for getting a beautiful blistered crust. A killer ear. And a more open crumb.
I’ll also unpack the typical stumbling blocks that all bakers face, like the change of seasons. There’s a lot we can’t control, but once we know how to read the signs of our sourdough, we can react accordingly. This course will make you a more intuitive, more confident baker.
I’m glad you asked! As a first step, I recommend cross-referencing your question with the downloadable e-book I’ve included with this course. You’ll likely find your answer there!
But if not, click the DISCUSSIONS button in the upper right corner of the course window to access my exclusive discussion board — free to every student even after you’ve completed the course. You can post your question there and I will answer it in the same discussion panel. Posted questions (and answers) are visible to all students of the course.
*PLEASE NOTE* I can ONLY respond to questions posted in the discussion panel. I'm afraid I cannot answer questions via email or social media.
Yep! The course is yours to access whenever you like. You can start it, pause it, rewind it, go away, maybe bake a beautiful loaf of sourdough, wait for it to cool, eat the whole damn thing, and come back to the course. You are able to learn at your own pace.

“I've watched dozens of tutorials on making sourdough bread and I've had some successes and just recently a big flop. Now I know how to avoid some of the mistakes I've made. Baking is a science and you teach the science behind it. Thank you for going in depth without being boring.”
Karin Hammons“I can tell you that of all the thousands of videos that I have watched YOURS ARE THE BEST! You are the only bread maker that all of us should be watching and learning from. Simply forget the rest!”
Virginia Bird“Bravo, really well explained! My very first sourdough bread came out of the oven this morning. I used cast iron bread pan. It tastes and looks amazing. Thank you!!!”
jerneja bene“OMG you're explaining things I have wanted to be explained better in lots of other videos I've watched. Thank you.”
Ryan Buck“LOVE your videos! I used your method to make sourdough and that was the BEST sourdough I have ever made!!!!!!! Thank you!”
Linda Hirsch“Seriously...... the best video of sourdough baking I've seen so far, and I've seen a lot... thank you... Thomas, Denmark”
Thomas Kybe“I've been making sourdough bread for 2 years now. Your video is one of the most helpful I've found and your methods significantly added to my success. I was never able to score the sough without the blade dragging. Doing this on cold, proofed dough was excellent. Also, baking the proofed dough that rose in the Dutch ovens right out of the fridge was perfect.”
Dale McCullough“Hats off to you, for explaining in detail, i have never seen such video, that makes you understand in depth. Thank you so much.”
Jigar Varia“Thank you. I had stopped baking sourdough because I just couldn't get it right. You have inspired me to give it another try.”
