I purchased the course, "How to Make Great Sourdough: and it was so worth the money. I have gone through the course multiple times and am now confident with baking bread and have also journeyed into using different types of flour. I've been stumbling with trying to bake sourdough bread since August of last year. Watching many instructional videos one after another. This is by far the best laid out instructional course I've watched. Prior to actually paying for this course I baked sourdough using Nicole's YouTube online successfully. Since August I've stumbled trying other bakers shortcuts and different variations of recipes. Each time I followed and used Nicole's YouTube recipe my bread turned out great. Ok.. I'm still struggling with high hydration.. but I'm sure using her instruction. I will succeed. Bottom line... take her course and use her material. I look forward to any additional videos she's willing to offer. To bad she doesn't offer an in person course. Thank you Nicole. Oh.. add-ins video available?

Just wanted to say how impressed I am with your “Great Sourdough Bread” course. I really appreciate your clear instructions and thoughtful explanations. I am not new to sourdough bread. I picked it up as a pandemic hobby almost 2 years ago. I’ve watched tutorials and read books, but my results have been inconsistent. Going through your course, there were several “aha” moments. For example: * Folding. Many other tutorials talk about folding for strength and extensibility, but I was always confused about how many times to fold. (When is my dough extensible enough?) The window pane test after every fold is a great way to know! I’m sure as I get more experienced I’ll develop a feel for it, but for now it’s a great way to know when to stop with the folds. * Bulk fermentation. I’ve read about the “50% increase in volume” before, but it wasn’t until I read your PDF guide that I realized that folding and bulk fermentation are independent. I.e., I don’t have to keep folding while I’m waiting for the increase in volume — I can just let it rest until it reaches the desired volume. That might seem obvious, but it wasn’t to me. I’ve baked with your recipe twice already with great results. The first time with 10% whole wheat and today bumping that up to 15%. What's more, the recipe is manageable. I've achieved the same results with your steps as more complicated ones with a long autolyse and lamination, etc. If I save time, I'm more inclined to bake more often! Thank you for this amazing course!

This entire course is a gorgeous visual recipe. The instructor, Nicole, takes us through step-by-step to provide the viewer not only with one great recipe (and several variations), but also what happens if something goes wrong and how to tell that you're doing it right. I've been experimenting with sourdough making for years, trying lots of different methods from various cookbooks, but this is the foolproof class I needed from the beginning -- before I started experimenting without understanding the science.     Every single step of the sourdough process is demonstrated clearly and concisely on camera — nothing is left for you to figure out on your own. I don’t assume anything (like if you have specialized equipment). Which means I often demonstrate TWO ways of doing things.

    For example: I show you two ways to proof: one with a regular mixing bowl, the other using a banneton (proofing basket) because they require two distinct ways of preparing the dough. I also show you how to make both an oval and a round loaf (they require two different methods of shaping). And when it comes to the baking, I show you how to use a dutch oven or a pizza stone.
